Zucchini Noodles With Zesty Avo Sauce
10 ounces fresh grape tomatoes (halved)
1 teaspoon dried oregano
salt and pepper to taste
2 spiraled zucchini
3 tablespoon crushed walnuts (toasted optional)
Avocado Sauce Ingredients
1/4 cup olive oil
1 garlic clove
1/2 teaspoon salt
1/2 cup fresh leaf parsley
3 green onion (only green part)
juice of 1 lemon (lemon zest optional)
Instructions 1. Using food processor or blender, pulse avocado sauce ingredients until its a smooth texture and set it aside
2. Spray large skillet with olive oil and let heat for 30 seconds on medium heat
3. Add grape tomatoes into skillet and sprinkle dried oregano, salt and pepper to taste, cook until tomatoes are roasted or skin loosens then remove from heat 4. Add zucchini to the skillet and toss for 2 minutes until they become a little crispy
5. Add avocado sauce, toss until combined
6. Season with salt and pepper if necessary and add crushed walnuts.
