Ingredients:
1 lb. baby red potatoes (about 6-8 potatoes), halved
1 small red bell pepper, chopped into 1-inch pieces
1 small green bell pepper, chopped into 1-inch pieces
1 small yellow bell pepper, chopped into 1-inch pieces
1 medium red onion, chopped into 1/2-inch pieces
8 pieces (about 3 lbs.) bone-in chicken parts (I used 4 thighs + 4 legs), pat dry
1/3 cup olive oil
4 cloves garlic, minced
1 teaspoon dried crushed rosemary
1 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground pepper, to taste
Additional fresh rosemary, for garnish, optional
