PUMPKIN WHITE CHOCOLATE CHEESECAKE
For the dough:
15 Medjool Dates
2 cups walnuts
For the filling:
15 oz organic pumpkin puree
1 1/2 cups walnuts
4 oz vegan cream cheese
4 medjool dates
1/2 cup orange juice
vegan white chocolate for garnish
1. First make the dough. Combine dates and walnuts in the bowl of a blender or food processor. Pulse until you have a sticky mixture. Prepare a 7 inch spring form with parchment paper or grease with a little bit coconut oil, then press the date-walnut mix firmly onto the bottom.
2. For the filling, combine organic pumpkin puree, walnuts, vegan cream cheese, orange juice, and dates and process again with the blender or food processor until smooth.
3. Finally put the filling on top of the dough. Garnish with White Chocolate shaves. Chill until serving. Enjoy!
