Cheesy Red Capsicum Penne
Ingredients (serves two):
1 brown onion, sliced
2 large red capsicums, roughly chopped
1 large tomato, roughly chopped
1/4 cup soaked cashews
1/4 cup nutritional yeast
1 block vegan bio cheese, grated
5 stalks curly kale, de-stemmed and torn into small pieces
1 stock cube
1/2 cup unsweetened nut milk (or coconut cream)
1 tbsp vegan butter
1/2 pack penne
Sauté onion, capsicum and tomato until cooked through
Add the veg mixture to a high speed blender and add lemon, stock cubes, nutritional yeast and cashews until smooth. Add to pot and stir in nut milk (or coconut cream)
Cook your pasta, when it’s finished, drain, return to pot and mix vegan butter through.
Add kale and cheese to the pot on a medium low heat and stir slowly until the kale wilts and the cheese melts.mix pasta through.
Garnish with herbs and black pepper. Add salt if desired. Enjoy!
